Carbonara Frittata

2 c. cooked penne pasta
1 lb cooked bacon, sliced
1 1/2 c. frozen mixed veggies
1 TBSP olive oil
1 tsp cayenne
1 1/2 tsp coriander
3 TBSP dried onion flakes
1 TBSP minced garlic
8 eggs
1 c. pizza cheese

Preheat oven to 400. While cooking the bacon, also cook the pasta. Once both are done, set aside. In a large frying pan, saute oil with mixed veggies until warm. Add bacon, penne, cayenne, coriander, onion and garlic. Cook over medium heat for 5 minutes. In a bowl, lightly beat eggs then add to frying pan. Cook for another 5 minutes, then add to a lightly greased 13×8 pan. Cook for approximately 20 minutes. Sprinkle with pizza cheese and cook for another 3-5 minutes until the cheese is melted. Cut into squares and serve.
