Citrus Pork Bowl

1 lb pork chops, cut into 1-inch pieces
1 c. orange juice, divided
2 TBSP dijon mustard
1 TBSP brown sugar
1 1/2 tsp corn starch
1 tsp ginger
1 c. frozen peas
1/2 c. frozen lima beans
3 c. cooked rice
11oz can mandarin oranges
Sliced almonds
Crispy onion strips

In a frying pan, combine 1/2 c. of orange juice, mustard, brown sugar, corn starch and ginger. When it starts to warm up, add peas and lima beans. Cook over medium heat for 5 minutes. Remove from pan and place in a bowl. In the frying pan, add pork along with 1/2 c. of orange juice and cook until no longer pink. Stir in peas, lima beans and juice. Continue to cook over medium heat until thoroughly cooked. Place rice in a bowl, topped with pork mixture. Then add oranges, almonds and onion strips on top, then serve. We also served this with steamed edamame.
