One of my new favorite things to use are Panko breadcrumbs. They are light and crispy, but provide a good flavor as well.
4 chicken breasts
2 TBSP Dijon mustard
Salt & Pepper to taste
1 c. Panko breadcrumbs
Preheat oven to 450. In a bowl, mix mustard, salt & pepper together. Cover chicken breasts with mustard. In a separate bowl, add breadcrumbs. Place chicken in bowl and cover with breadcrumbs. Place on a cookie sheet. Cook for 15-20 minutes. Once chicken is done, serve 🙂 I served this with a side of Dijon mustard used as a dipping sauce. I also served it with fresh green beans and jasmine rice on the side.
