Garlic Mashed Potatoes

6 medium sized potatoes
2 sticks of butter
4 cloves garlic, minced
1/2 c. milk
1/4 c. Parmesan cheese

Peel and wash potatoes, then cut into 1 inch cubes. Place in a large pot and cover with water, add 1 stick of butter. Cook on high heat until the potatoes are tender. Strain potatoes in a colander, then transfer to a large bowl. Add 1 stick of butter, garlic, milk and Parmesan cheese. With a hand mixer, blend until smooth, adding more milk as you go if needed. Sprinkle with fresh parsley and serve.
