Hoppin’ John

This was such a fun meal to make. It was my first time cooking with dried beans, so I was a little nervous, but it ended up being great and the whole family enjoyed it. I served it with some Frank’s Red Hot & homemade cornbread.

1 1/2 c. dried black-eyed peas
6 slices of bacon, diced
1 c. onion, diced
2 cloves garlic, minced
4 c. water
8oz ham, diced
1/2 tsp celery salt
1/4 tsp cayenne
1/4 tsp black pepper
1 1/2 c. frozen peas
3/4 c. long grain white rice

In a colander, place black-eyed peas and run cold water over them. In a large pot, cook diced bacon until done, but not crisp. Remove bacon from pan, leaving drippings in the pan. Add diced onion and garlic to pan and cook until tender. Slowly stir in black-eyed peas, water, ham, spices and peas. Bring to a boil, then cover and reduce heat. Cook for 25 minutes. Stir in rice and return to boil. Once boiling, cover and reduce heat, simmering for 15 minutes. Once done, remove from heat and let stand for another 15 minutes. Top with green onions and Frank’s Red Hot. Serve with cornbread.
