Tamale Pie

1 lb ground beef
1/4 c. dried onions
1 clove garlic, minced
1 tsp cumin
1 tsp coriander
1/2 tsp cayenne
2 TBSP flour
1 c. beef stock
1 can diced tomatoes
1 can black beans, drained & rinsed
1 c. frozen corn
1 package pre-cooked polenta, sliced into 1/4 inch slices
1 c. cheddar cheese

Preheat oven to 350. Brown meat with onion and spices. Drain. Then add flour. Mix well. Slowly add beef broth and cook until slightly thick, several minutes over medium heat. Add tomatoes, beans, and corn. Pour into a casserole dish that has been sprayed with non-stick cooking spray. Lay the polenta slices on top and cover with cheddar cheese. Bake for 30 minutes.
