Beef Curry

2 lbs. stew beef
1/2 tsp salt
1/4 tsp pepper
1 medium onion, sliced
3/4 lb yukon potatoes, cut into about 1 inch pieces
3 cans light coconut milk
2 TBSP curry powder
1 TBSP soy sauce
1/2 tsp ground ginger
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp cayenne pepper
1 c. frozen carrots
1 c. frozen green beans
Jasmine rice

Add all ingredients into a crock pot, except green beans & carrots, sprayed with non-stick cooking spray. Cook on high for 5 hours. Add carrots and green beans. Cook on high for 1 more hour. Serve beef curry over jasmine rice.
