Stuffed Chicken Breasts

4 boneless, skinless chicken breasts
1/4 c. feta cheese
1/4 c. bacon, chopped
1 4oz can mushrooms
1/2 tsp garlic powder
1/2 tsp cayenne
1/2 tsp mustard seed
1/2 tsp coriander

Preheat oven to 350. Cook bacon, then set aside. In a medium bowl mix feta and mushrooms together. Once bacon has cooled, chop into little pieces and mix with feta mushroom mix. Spray a 9×13 pan with non-stick spray. Carefully cut a pocket into the chicken breast, starting with the thick side first. Be careful not to cut all the way through the chicken breast. Once all of the chicken breasts have pockets, stuff each one with 1/4 of the cheese mixture. Place in the pan, and sprinkle with seasonings. Then cover the pan with foil. Cook for 20 minutes with the foil on, then uncover and cook for approximately 30 more minutes, depending on the thickness of the chicken breast.
