Here is another quick and easy meal that is great for the weekdays!
1lb chicken breast – cut into 1 inch pieces
1 TBSP olive oil
1 tsp chili powder (add more if you want more of a kick)
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp red pepper flakes
1/4 tsp oregano
1 1/2 tsp cumin
Salt & pepper to taste
1 red bell pepper – cut into 1/2 inch slices
1 green bell pepper – cut into 1/2 inch slices
1/2 red onion – cut into 1/2 inch slices
Shredded Colby Jack
Cook Spanish rice according to box directions. While the rice is cooking, heat olive oil up in a large frying pan. Add chicken and cook until about 1/2 way done. Add in all spices (chili powder, garlic power, onion powder, red pepper flakes, oregano, cumin, salt & pepper). Stir seasonings into pan very well, ensuring chicken is covered. Then add red & green bell peppers along with the red onion. Reduce heat to medium low and cover with lid, occasionally stirring. Cook until the veggies reach your desired texture. When the rice and chicken are done, assemble fajitas with chicken, veggies, and any other toppings you’d like.
