Quick & Easy Dinner – Creamy Pasta with Peas

We have all had days where we’ve been stressed, busy, and before you know it, it’s dinner time. You look in the fridge for what to make, only to find out you don’t have ANYTHING! Here is a quick and easy meal that can be made with items you may already have on hand:

1 box of pasta (I used a rice pasta that was gluten free because I had 2 boxes on hand)
2 c. 1% milk
2 TBSP flour
1 tsp chili powder
2 cloves garlic, minced
1 tsp Italian seasoning
1 – 1 1/2 c. frozen peas
1 c. shredded cheese

Cook pasta according to package directions. While the pasta is cooking, in a large saucepan, warm up milk over medium heat. Once milk is warm, whisk in flour slowly, minimizing lumps. Once it has been mixed well, add in chili powder, garlic, Italian seasoning, and peas. Mix together and heat over medium heat until sauce starts to thicken and peas are no longer frozen. Once pasta is al dente, put in a colander and strain. Return pasta back into pan it was cooked in, then add sauce mixture and cheese. Mix together and serve! 🙂 I topped mine with Sriracha, but my husband used Worcestershire and loved it!
