I recently wrote an article about the Benefits of Greens. In this article, you’ll find a long list of reasons that you should be eating more greens on a daily basis. Once you know about the health benefits, there really is no excuse on why you aren’t eating them more often. Well maybe one, How Am I Supposed to Cook Them? Well here are a few recipes for you!
Collards with Dill & Parsley
1 bunch collard greens
1 c. fresh chopped dill
1 c. fresh chopped parsley
2 TBSP olive oil
1 tsp black pepper
Pinch of sea salt
Wash collards, cut stems off and chop into small pieces and set aside. Stack leaves and roll them up, as you would a sushi roll, then slice from the end to create long strips. Warm oil in a pan with black pepper, and add stems, sauteing for a few minutes. Add collard greens and sea salt, then saute for about 3 minutes. Add water, cover and allow to steam for 3-4 minutes, then remove from heat. Add chopped dill & parsley, toss well and allow to sit uncovered for a few minutes, then serve.
**Mix the juicde of a lime and a dash of cayenne. Toss with the greens for a little extra kick.
1 – 2 bunches kale
Preheat oven to 425 degrees. Remove kale from stalk, leaving the greens in large pieces. Place a little olive oil in a bowl, dip your fingers and rub a very light coat of oil over the kale. Place kale on baking sheet and bake for 5 minutes or until it starts to turn a bit brown. Keep an eye on it as it can burn quickly. Turn the kale over and bake with the other side up. Remove and serve.
