Orange Sage Chicken

What is one of your go-to meals? Sometimes when I’m stuck in a creative rut and cannot figure out what to add to our meals for the week, I fall back on this easy crockpot meal, Orange Sage Chicken. And did you know this is one of the amazing things you can eat while doing one of Elite Health Coaching’s Seasonal Detoxes??? Real food!!! While on the detox, we do avoid refined pastas, sugars, etc. so other side options would need to be used. If not on a detox, serve this meal with butter noodles and asparagus for a bit of color!

1 whole chicken (4-6 lbs)
2 TBSP fresh parsley, chopped
8 cloves garlic, minced
2 TBSP olive oil
1 large shallot, chopped
2 tsp fresh sage, chopped
2 navel oranges

Spray crock pot with non-stick cooking spray. Rinse chicken, removing neck and giblets if necessary. Place chicken in the crock pot. In a medium sized bowl, mix together parsley, garlic, olive oil, shallot, and sage. Slice navel orange into 1/8ths. Squeeze the juice of 1/2 an orange in the bowl with the spices, mix well. Set orange slices aside. Put about 1/3 of spice mix inside the chicken. Rub the rest of the spices on the outside of the chicken. Place a few orange slices inside the chicken, and spread the rest over the top in the crock pot. Cook on low for 6 hours. We served this with buttered noodles & fresh asparagus.
