Shrimp & Blueberry Salad
1 – 1 1/2 c. lettuce
1/4 c. fresh blueberries
4-5 large shrimp, grilled
1/4 c. cucumber slices
1 TBSP lemon juice
1 TBSP olive oil
1 clove garlic, minced
To make the dressing, mix lemon juice, olive oil, and garlic in a small bowl. Place the lettuce in a bowl and then top with cooked shrimp, cucumbers, and blueberries. Mix dressing before pouring on top of the salad.
Each ingredient plays an important role in the detox program:
Blueberries – Rich in antioxidants and Vitamin C, lowers cholesterol, aids in digestion, anti-depressant
Cucumbers – Anti-inflammatory, rich in fiber, regulates flow of urine, cooling food
Lemons – High in Vitamin C, help flush out toxins
Garlic – Cancer fighting properties, heart friendly, antibacterial, antiviral
If you choose a lettuce like kale for example, it is rich in Vitamin A & C, helps lower cholesterol, controls blood sugar, and is high in fiber.
