Chicken Fajitas for Fall

1lb chicken breast or tenders (cut into 1 inch pieces)
1 TBSP olive oil
1/2 c. water
1 TBSP corn starch
1/2 tsp chili powder
1 tsp salt
1 tsp paprika
1 tsp sugar
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp cumin
1 yellow squash
1 red bell pepper
1 green bell pepper
1 onion (quartered)
EXTRAS: Tortillas, sour cream, shredded cheese, salsa/hot sauce, tomatoes, avocado

In a large frying pan, warm oil over medium heat. Once warm, add chicken. While chicken is cooking, combine all spices in a small bowl. When the chicken is done, add spices along with water, stirring until well mixed. Add vegetables and continue to cook over medium heat until veggies are to your liking. We like our vegetables a little soft but still with some crunch to them. This is a quick and easy meal that the whole family will love!
