Peach & Mango Pork Chops – REPOST

Once this meal was done, I realized it was a great meal to make when we are short on time as a family. Took about 30 minutes total and then we were all ready to eat. The funny thing is that my son used to HATE zucchini, so I would make him a separate veggie that he liked. It became a hassle, so I started to just serve the same veggie for the whole family. When I served zucchini he asked what veggie he was going to have. I let him know he was having zucchini. When it was steamed with a little bit of butter, he LOVED it and even asked for more.

4 pork chops
1 TBSP oil
Salt & pepper, to taste
1 jar of Mango & Peach Salsa
1 box of Near East Garlic Rice Pilaf (follow package directions)
3 zucchini – cut into 1/4 inch slices

Start cooking the rice per package directions. While the rice pilaf is cooking, in a large frying pan add 1 TBSP olive oil. Heat olive oil, then add in pork chops. Season with salt & pepper. Cook pork chops over medium heat, browning each side. Once both sides are browned, add in entire jar of salsa. Cook for about 10-15 minutes, until no longer pink. When the rice has about 10 minutes left, start steaming the zucchini. Once pork is no longer pink and the rice is cooked, serve with a side of zucchini.
